What? What did I say?
This southern Italian dish ”spaghetti alla puttanesca” literally translates to whores style spaghetti. And it is yummy.
It was a Mediterranean kind of day. If you can’t join them, you might as well eat like them.
I had a pretty long day at work tonight, and lacking a happy hour friend tonight, I decided to head to the gym to blow off some steam instead.
After the gym, I had to hit fresh and easy. Our “eat well before the wedding diet” is coming along just find, but it makes it hard for us to keep a stocked household. Perishable, and expensive usually means we go shopping twice a week now.
I knew I wanted pasta (blame the gym) but the puttanesca sauce inspired the meal. Tangy sauce with tomatoes, olive oil, kalamata and black olives with capers and anchovy.
Okay. Mediterranean it is.
Add to that some Mediterranean veggies, whole grain Rotini Pasta and some super marked down seafood and I had myself a meal.
Easy to prepare too. I sauteed the veggies in a bit of the sauce and a splash or three of red wine while I boiled the pasta.
When the veggies were fairly close to finished, I added the seafood mix and all the broth to the pan to simmer covered for an additional 5 to 10 minutes.
Viola! Delicious.
I will be making this again.It was really wonderful.
After dinner, I packed up leftovers in containers for Mark and I (he is at work late tonight). Now it is time for a bit of well deserved me time. I work 6 days a week and have been in need of some lazy time.
Wine and House Hunters International, and the probably early to bed. I have to open again in the morning.
